Strawberry Shortcake Recipe
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup whole milk
- 1 teaspoon vanilla extract
- 1 pound strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold and cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- In a separate small bowl, whisk together the whole milk and vanilla extract. Pour the milk mixture into the dry ingredients and stir until just combined.
- Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
- Using a round biscuit cutter, cut out shortcakes from the dough and place them onto the prepared baking sheet.
- Bake for 12-15 minutes or until golden brown. Remove from the oven and let cool on a wire rack.
- In a medium bowl, combine the sliced strawberries and granulated sugar. Toss to coat the strawberries in the sugar and let sit for 10 minutes.
- In a separate mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
- Split the shortcakes in half and spoon some of the strawberry mixture onto the bottom halves. Top with a dollop of whipped cream and then place the top halves of the shortcakes on top.
- Serve immediately and enjoy!
