Mexican Stuffed Peppers Recipe

Ingredients:

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C). Slice the tops off the peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
  3. Add the ground beef to the skillet and cook until browned. Drain any excess grease.
  4. Add the cooked rice, black beans, corn, diced tomatoes, tomato paste, chili powder, cumin, salt, and black pepper to the skillet. Stir to combine.
  5. Spoon the filling mixture into the peppers, packing it tightly. Top each pepper with a sprinkle of shredded cheddar cheese.
  6. Cover the baking dish with foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.
